Sprinkles, for decorating
Strawberry, blueberry, peach, etc. yogurt, for filling
Coconut, tinted green
Easter M&M's and Reese's Pieces eggs
- Leave the pie dough out at room temperature for 20 min per box directions. Unroll the refrigerated dough and use a biscuit cutter to cut circles to fill bottoms and sides of mini muffin tins. You should have to re-roll only once to get 24 total. Use a small cookie scoop to press the dough up the sides.
- Drop in some Easter sprinkles just for fun before baking. Use pie weights if you have them - otherwise the dough will puff and you’ll want your cookie scoop handy to re-fit puffed crusts out of the oven.
- Bake per box directions, watching carefully to prevent over-browning.
- After cooling, put a tiny bit of pastel colored (strawberry, blueberry, peach, etc.) yogurt into each cup for the “filling,” then top with unsweetened coconut that is tinted green. Then use Easter M&M's and Reese's Pieces eggs to decorate the baskets and the stand.
