Can I freeze Wewalka dough?

This is not recommended. Wewalka dough retains its best baking quality if it remains refrigerated.

Does the dough contain any GMO products?

Our dough is made of thoughtfully sourced and high-quality ingredients, and does not contain any genetically engineered ingredients.

Does your dough contain allergens such as gluten, dairy, egg, sesame, soy, legumes and nuts?

  • Our Bistro- and Family Style Pizza dough contains wheat and milk.
  • Our Flatbread dough contains wheat, and may contain traces of milk.
  • Our Danish Pastry dough contains wheat, and may contain traces of milk.
  • Our Puff Pastry dough contains wheat, and may contain traces of milk.
  • None of our products contain nuts of any kind (peanuts or tree nuts), eggs, legumes, sesame or soy, nor are any of these processed in our facility.

Can I freeze items after baking?

This is not recommended. Baked items taste their best when they are enjoyed fresh.

Are Wewalka products suitable for a Vegan diet?

Wewalka Puff Pastry dough, Flatbread dough and Danish Pastry dough are Vegan-friendly. However, our pizza doughs contain milk, which are not suitable for a vegan diet.

Are Wewalka products suitable for Vegetarians?

Yes, all Wewalka dough products are free of animal products and meet vegetarian standards.

Is Wewalka dough organic?

Wewalka dough is made of premium ingredients, but it cannot be claimed organic.

Which Wewalka doughs contain yeast?

Wewalka Pizza, Flatbread and Danish Pastry doughs contain yeast. It has been used by artisan bakers for centuries to make the dough rise.

Is Wewalka dough gluten-free?

Wewalka is not gluten-free. High-quality wheat flour is a main ingredient in our dough.

How much sugar is in the product?

We use only very little sugar in our products. Our Puff Pastry Dough contains less than 1 gram per serving and our Danish Pastry Dough only 2 grams per serving. We don’t add any sugar to our Pizza or Flatbread dough.

Baking

Do I need to roll Wewalka dough with a rolling pin?

No. Wewalka is rolled on parchment paper to ensure the perfect thickness. Simply unroll the dough and place it with the parchment paper onto a baking tray/sheet.

Can Wewalka dough tear when you unroll it?

Wewalka dough is less likely to tear if it is kept on the enclosed parchment paper.

When using Wewalka, do I need to spray or grease the baking pan?

Wewalka dough is ready to bake right out of the package. Simply unroll the dough and place it on the pan with the included parchment paper. No cooking spray or grease is required.

Which oven rack should I use to bake Wewalka products?

Always place Wewalka dough on the middle rack of the oven unless otherwise specified by the recipe.

What is parchment paper?

Parchment paper, also called baking paper, is a heat-resistant liner that prevents baked items from sticking to the pan. It also removes the need for baking sprays and reduces mess and cleanup.

Will Wewalka’s parchment paper burn in the oven?

Wewalka parchment paper is oven safe up to 500°F.

Why is the parchment paper turning brown while baking?

Unlike some other parchment papers, it is typical that this parchment paper will get a little browner. One reason is that it is thinner than regular baking paper sheets. However, this does not impact the item baking on it in any way.

How do I make baked items look more golden brown?

Before baking, brush the dough with egg wash or olive oil.

(Egg wash is made by beating 1 raw egg with 2 Tbsp. of water with fork or whisk.)

What is the perfect temperature for baking Wewalka dough?

The perfect temperature depends on the recipe. However, below is a general rule of thumb for baking Wewalka products:

Baking temperature for conventional gas or electric oven:

  • 425°F – for Puff Pastry, Classic & Bistro Pizza and Flatbread
  • 400°F – for Danish Dough

Baking temperature for convection oven:

  • 400°F – for Puff Pastry, Classic & Bistro Pizza and Flatbread
  • 350°F – for Danish Dough

Can Wewalka dough be baked in the microwave?

Microwave baking is not suitable for raw dough. A toaster oven can be used, but should be monitored as baking times will be longer than stated for conventional or convection ovens.

What are the advantages of baking the Wewalka dough on parchment paper?

The benefits of baking on parchment paper are numerous:

  • No need to prepare the baking pan with grease or cooking spray
  • No need to roll dough out with rolling pin, it has already the perfect thickness and shape
  • No clean up after baking, just throw way the parchment paper after baking

What is the difference between Pizza Dough and Flatbread Dough?

Our Flatbread Dough contains less raising agent than our pizza doughs so it's thinner, crispier, and won't rise as much. It's an authentic European-style dough recipe – not from Italy like pizza, but from the Alsace-Lorraine area – and usually served with lighter ingredients like sour cream and vegetables instead of tomato sauce and cheese. Flatbread makes a great alternative to high-rising pizza crust for people who want to cut down on carbs.

How many people does a package of Wewalka dough serve?

Serving sizes will vary by recipe. However, below are some general serving guidelines:

  • Classic Pizza Dough – Measures 9.4 x 14.2 in. and serves up to 8.
  • Bistro Pizza Dough – Measures 11 in diameter and serves up to 4.
  • Puff Pastry Dough – Measures 9.4 x 13.8 in. and serves up to 6.
  • Danish Dough – Measures 8.3 x 13 in. and serves up to 6.
  • Flatbread Dough – Measures 9.5 x 15.8 in. and serves up to 6.

How long will baked items keep in the refrigerator?

This depends largely on the ingredients used in the baked items. Generally, items expire between 2 and 5 days.

What is the best way to reheat baked pastry?

We recommend reheating pastries in an oven at 350°F for several minutes. Microwaving is not recommended as the dough will become soggy.

What is that plastic disc found inside some Wewalka packaging?

The packaging for Wewalka yeast dough products contain a special valve that allows the product “breathe”. This keeps yeast active and ensures that Pizza Crusts, Flatbread and Danish Pastry rise and bake to perfection.

Can I eat raw Wewalka dough?

No. We advise against eating raw dough.

Can Puff Pastry be used for sweet or savory recipes?

What is the difference between Puff Pastry Dough and Danish Pastry Dough?

Puff Pastry Dough consists of 64 ultra-thin layers of dough. It does not contain yeast and bakes to a delicious flaky finish. Danish Pastry dough is similarly made with 36 layers of dough, but it includes yeast for rising to provide a light and airy result.
