This recipe is summery, pretty to look at, and fun to put together. It's perfect for summer date nights, girls' night, family time, dinner on the balcony or patio, paired with wine, etc. It doesn't take too long and it cooks quick so don't worry - you won't heat up your home too much!
2 pkg. Wewalka Bistro Pizza Dough
2 tsp. olive oil
2 cups sliced red onion
Salt, to taste
Pinch red pepper flakes
3 Tbsp. honey
1 cup ricotta cheese
1 cup feta cheese
2 cups blueberries
- Preheat oven to 425°F. Unroll the refrigerated Bistro Pizza doughs and arrange on the baking sheets or pizza dishes with provided parchment paper.
- Heat the olive oil over medium low heat. Add in the onion and season with a bit of salt and a pinch of red pepper flakes. Cook the onions until wilted, about 5 minutes. Stir in the honey, letting the onions caramelize for another 3 or so minutes. Remove from heat.
- While the onions cook, stir the ricotta and feta cheese together in a bowl. Spread the cheese mixture onto the dough, and then top with the honey caramelized onions. Sprinkle the blueberries on top.
- Place the pizzas into the oven to bake for about 15 minutes, or until the blueberries are just about ready to burst and the crust looks lightly toasted. Remove from oven, sprinkle with micro greens and serve.
