Huevos Rancheros Breakfast Pizza

Ingredients: 

1 pkg. Wewalka Classic Pizza Dough
6 oz. veggies-only salsa
6 oz. roasted red peppers
2 oz. green chiles
1/2 cup chicken broth
1 can refried black beans
4 oz. Cotija cheese, crumbled
16 whole eggs
1/4 cup 2% milk
1/4 cup Greek yogurt
1/2 ripe avocado, chopped
Handful fresh cilantro leaves

Steps: 
  • Preheat oven to 425°F.
  • To make the sauce: In a small saucepan, combine salsa, roasted red peppers, green chiles and chicken broth. Bring to a boil, then reduce heat and simmer 10 minutes. Use an immersion blender to blend the sauce to a smooth consistency. Keep warm.
  • Unroll refrigerated Wewalka Classic Pizza Dough onto a large baking sheet. Spread beans over the crust. Top with about 3/4 of the crumbled cheese. Bake 15 minutes.
  • Meanwhile, whisk eggs with milk and scramble in a wide high sided sauté pan until cooked to your liking. Remove pizza crust from oven and top with scrambled eggs. Stir the yogurt into the sauce and drizzle sauce over the top. Top with remaining Cotija cheese, avocado pieces and fresh cilantro leaves.
