Grilled Zucchini and Fresh Mozzarella Pizza
This is the best of summer... fresh zucchini, marinated and grilled on top of a grilled crispy crust
- 1 pkg. Wewalka refrigerated Bistro Style Pizza dough
- 1 large zucchini or 2 small zucchini
- 1 ball fresh mozzarella
- 1 bunch scallions, whole but trimmed
- juice of 1 lemon
- 2 Tbsp. extra virgin olive oil
- 1 tsp. red pepper flakes
- salt and pepper to taste
1. Preheat grill on Med-High heat. Place a pizza stone on cool grill and allow to heat up with the grill.
2. Slice zucchini ¼ in thick lengthwise into long ribbons and mix with chives, lemon, olive oil, red pepper flakes, salt and pepper. After marinaded, place zucchini and chives on Hot Grill, flipping after 3 mins. Close the grill and cook for an additional 3 minutes and remove from heat.
3. Next, unroll the pizza dough on the enclosed parchment paper and flip onto hot pizza stone, removing the parchment paper from the top of the dough. Brush top of dough with olive oil and close the grill cover, letting the pizza to cook for 3-4 minutes or until the bottom of the pizza is browned. Flip the pizza and top with zucchini, chives and mozzarella slices. Close the grill and let cook for 2-3 more minutes or until cheese is bubbly. Remove from heat and top with chopped basil and drizzle with olive oil.
