These creamy ham and cheese Croissants are made with airy puff pastry and accented with jalapeños.
1. Preheat oven to 425°F.
2. Finely cut the ham and mix with diced jalapeños, sour cream, cheese, egg yolks, parsley, salt, and pepper.
3. Unroll the refrigerated Puff Pastry Dough on the enclosed parchment paper and place on a baking sheet. Cut the dough sheet in 8 evenly shaped triangles by cutting through the middle top to bottom, then left to right, and then twice diagonally. Place 1/8 of the ham and sour cream filling on the wider side of each triangle and then roll up towards the tip. Seal the contents and shape into a croissant.
4. Coat the croissants with egg wash.
5. Bake in the oven for approx. 15-20 minutes or until browned and nicely puffed. Serve warm.
