A nice way to serve the "catch of the day".
1. Roll out refrigerated Puff Pastry Dough and cut into rectangles, about 1.5x4 in. in size. Coat with egg-wash and bake in the oven at 400°F for approx. 10 minutes. Take out of the oven and let cool down.
2. Finely chop the herbs. Halve the tomatoes, core them and cut them into small cubes. Likewise cut the peppers and the radishes into small cubes. Peel the cucumber, core it and cut it into small cubes. Blend the cut vegetables in a bowl. Add cottage cheese, sour cream, herbs, horseradish, salt, pepper and garden cress and mix well.
3. Cut trout filets into half, lengthwise. Fill cottage cheese & vegetables mix into a piping bag and spread onto the Puff Pastry “boats”. Then place the filets of trout on top and garnish with a piece of lemon and a twig of parsley.
