A classic recipe with a delicious twist... this quiche recipe uses puff pastry for a flaky crust!
1. Preheat oven to 400°F.
2. In a medium bowl, mix the eggs, heavy cream, cheese, and put aside.
3. Unroll the refrigerated Puff Pastry Dough and place in a round 9 in. tart pan or 9 in. round pie pan, and pinch dough around sides. Trim off excess and use to make round - meet pan edges if necessary. Put in a cold place.
4. Warm the oil in a pan and sauté the onions, bacon, leeks and pepper until veggies are soft and bacon begins to lightly brown, about 5 minutes. Season with salt, pepper and nutmeg. Let cool slightly.
5. Distribute bacon filling on pre-cooled pastry and pour on egg-cream mixture. Bake in oven for approx. 25 minutes, until center puffs and the quiche is cooked through. Serve warm or at room temperature.
